Everyone loves Chipotle, especially its famous cilantro lime rice, topped with juicy chicken fajita and salsa.
I love Mexican recipes and this is my Chipotle copycat recipe, homemade, easy and healthy!

As the name suggested, this steamed white rice is flavored with simple ingredients below:
- Cilantro leaves
- Lime juice
- Unsalted butter
- Chicken broth
- Salt

How to Make Cilantro Lime Rice?
It’s very easy to make the rice. Everything is cooked in one skillet or pan so there is only one utensil to wash.
First, rinse and cook the rice in a skillet with water, chicken broth, salt and butter.
After the rice is cooked, add cilantro leaves and lime juice to the rice, stir to mix well and serve immediately.
The end result is absolutely delicious, refreshing and appetizing.
The rice is moist, with the wonderful aromas of the cilantro and goes well with chicken recipes, shrimp recipes or salmon recipes.

Cilantro Lime Rice
Cilantro Lime Rice - easy and delicious one-pot rice with cilantro, lime juice and butter. This Mexican-inspired rice is better than Chipotle.
Ingredients
- 2 cups long grain rice
- 1 cup water
- 1 1/4 cups chicken broth
- 1/4 teaspoon salt
- 3 tablespoons melted unsalted butter
- 1/4 cup chopped cilantro leaves
- 4 tablespoons fresh lime juice

Rinse the rice thoroughly with cold water and drain, repeat for 3-4 times until the water runs clear. Transfer the clean rice into the skillet and add 1 cup clean water, chicken broth, salt and butter to the rice.

Cover the lid and cook on medium heat for 15 minutes, or until the water is dry and the rice is cooked through. Turn off the heat, add the cilantro leaves and lime juice to the rice. Stir and loosen up the rice and mix well with the cilantro leaves and lime juice. Serve warm.

Perfect recipe for cilantro and lime rice dish. Super easy, quick, and delicious. I was a little skeptical at first when I read the ingredient list because I’ve always made my cooked rice with the same amount of liquid, but only one cup of rice; however, by following the directions and rinsing the rice first, the finished product is fluffy, moist rice.
My fam and I loved the Cilantro lime rice. I was looking for something that was a little more than plain white rice and this was perfect! And I happened to have some Cilantro to use up. Served it with another recipe of yours- Parmesan baked chicken breasts. That was yummy also.

Can you use dried cilantro. How many tsp or tbs should be used.
Well dried cilantro doesn’t have any taste or aroma. I don’t recommend.
